White Chocolate Cranberry Fudge

No Bake White Chocolate Cranberry Fudge for Christmas or Yule

Festive for the holidays, this Christmas fudge is so easy!

 

My style of baking are the no-bake kind of recipes! Don’t get me wrong, I have aspirations of being a baker of lovely confections that make everyone’s eyes roll when they bite into them. For some reason it has been a challenge for me, possibly my ancient oven or living in high altitude…whatever it is a no-bake recipe around the holidays is a go to for me. This recipe for white chocolate cranberry fudge is pretty and delish to give as a gift.  

1 package of white chocolate chips

1 tub of cream cheese frosting, 16 oz. 

1/2 tsp or orange extract

1 tbsp of orange zest

1/2 cup of dried cranberries

3/4 cup chopped walnuts (optional of course)

zest, cranberries and nuts to garnish

I poured this directly into the tins I used to gift the fudge. I just greased the tins. You could also use a greased 8×8 inch baking pan if you want to use cut up chunks of fudge.

Melt the white chocolate chips in the microwave for a few minutes pausing to stir periodically. Add time if you need more to get the chocolate smooth and creamy. 

Stir in the frosting, extract and nuts until well combined.

Scrape into the prepared pan or tin and refrigerate for at least 30 minutes or until firm. 

The fudge will keep for several weeks in the fridge so you can get started making your holiday treat gifts right away!
