Light Caramel Cheesecake

A light and tasty caramel cheese cake

The girls and I were cooped up in the house recently with a snowstorm and decided what better time to bake than a snow day? We had all of the ingredients on hand from aspirations of baking over the holidays that just never happened with everything else going on. We used dark brown sugar for the caramel sauce which gave it the rich color. This version we had a pre-made graham cracker crust on hand. Making crust is super easy however and you can get creative with adding crushed pretzels or nuts. I have included instruction for making the crust homemade here. (read more)

With the new year approaching, within days actually, I am dreaming of travel. Road trips are a fun way to get a quick and inexpensive travel fix. Camping is of the world class variety here in Colorado, and would be even more cozy and even downright glamorous in a teardrop style camper.  My totally cool bohemian friend Kelly Twin and her husband Julian of Twin Spruce Campers recently launched their website offering custom built teardrop trailers. Julian hand builds each camper himself, offering the kind of craftsmanship you could imagine back in the 1930’s when teardrop campers originally started to be popular. The idea was to build a compact camper using  standard 4 by 8-foot sheets of plywood with hardwood spars. (read more)

Have you been starting to think about company coming for the holidays? Setting a festive mood for the holidays is important for me to not get overwhelmed and sometimes downright depressed this time of year. I usually go about it my usual way of slowly collecting items that can be used to decorate around the holidays from post holiday clearance sales to my fave, thrift stores. I have recently become obsessed with trays. I found this deep red faux croc tray for a steal. Trays tend to corral your items and give the table a cohesive feel.  (read more)

Festive for the holidays, this Christmas fudge is so easy!

My style of baking are the no-bake kind of recipes! Don’t get me wrong, I have aspirations of being a baker of lovely confections that make everyone’s eyes roll when they bite into them. For some reason it has been a challenge for me, possibly my ancient oven or living in high altitude…whatever it is a no-bake recipe around the holidays is a go to for me. This recipe for white chocolate cranberry fudge is pretty and delish to give as a gift.

Convivial Bohemian Table

A romantic table lit by candle light. We only have so many heartbeats in this lifetime, and meals to enjoy, so I try to make them special.

One the best parts of cooking for me is the conviviality of coming together with family and friends. Nothing nourishes the bohemian soul more, with the exception of traveling perhaps. I think it is one of the most basic things we can to do in our world to promote peace and goodwill, starting right in our own homes. That is something that I try to point out to my girls, if everyone took the time to slow down and share nourishment and break bread with one another, no matter how humble, it might make a difference in the world one household at a time.
